Abstract
The aim of this study was to determine glycemic index of organic coconut sugar in three forms including coconut sugar, coconut flower powder, and coconut flower syrup. All products were prepared by the Chiwadi Products Co., Ltd. Twelve apparently healthy human subjects were included. Glucose powder was used as the standard. Each subject was fed three standards for comparison to test products, in which equal 50 g of carbohydrate was consumed. The glycemic index was calculated using the incremental area under the curve as compared to glucose standard. It was found that glycemic indexes of coconut sugar, coconut flower powder, and coconut flower syrup were 47.99%, 49.13% and 44.33%, respectively, which they were not significant difference. All three forms of coconut sugar are classified as low glycemic index since the glycemic index is less than 55%
